In Devon they have observed Beavers happily munching on Himalayan Balsam; also the kits followed their parents and copied the behaviour. Another good reason for introducing Beavers more widely.
We can eat them as well! (The young seed pods are edible while the seeds are still white and the pod isn't primed for explosion!) I saw this in Flora Brittanica (Ed. Richard Mabey.) A good source of Vit.C apparently.
